Six months ago, I was surprised and impressed when I saw on Instagram that Café uu was closing until further notice due to Covid-19. They'd only opened a few months before that, so suspending operations out of an abundance of caution was an impressive move. Owner Kim U. Kim invited us to the restaurant to check out the new menu and explain her reopening plan.

For now, you can order ahead and pick up lunch from noon to 2 p.m. or dinner from 4 to 6 p.m. Wednesday to Friday, or you can order at the counter for dining in during those times. Also check out the new brunch hours, Sundays 11 a.m. to 3 p.m. Reservations for brunch won't be required, and note for all pickup and counter service orders, Café uu doesn't accept tips! Can't make it during the current 2-hour serving windows? Email uu@cafeuu.net to make alternate arrangements.

When Kim's ready to start full-service dinners, they'll be Fridays and Saturdays, with reservations required at least one day in advance via email. Keep an eye on Cafe uu's Instagram for the start date.

Garret, Tyler, and I got to try a lot of the dishes from the menu and we loved it all. First up was a chicken taco plate, three huge tacos with a tangy Korean slaw, and tons of fresh red onions and cilantro. Absolutely perfect to split with friends or to keep all to yourself for a complete meal.

Up next, coconut curry noodles with marinated chunks of tofu plus carrots, onions, chard, peanuts, and cilantro. This was a standout dish for me because the noodles and the tofu both had a lot of flavor on their own; served together, they elevate one another to create a taste you won't soon forget.

All the noodle and rice bowls come with your choice of protein, and the generous strips of pork belly were a wonderful option in the kimchi rice bowl. It includes onions, green onions, crushed dry seaweed, and egg, and will probably be the best brown rice you've ever tasted.

Also new at Café uu: outdoor seating! Even if the outdoor tables are taken, the dining room is breezy and refreshing when the huge front window is open. Whether you're hanging out or picking up, these impressive dishes are sure to become fast favorites. Between visits, you can also find Kim's fresh food brand Sunrice at Sno-Isle Food Co-op in Everett plus the Amazon Go grocery stores in Seattle.
