1. El Mariachi Birria y Tacos

📍 6100 Evergreen Way, Everett, WA 98203

Let’s start with the birria legend itself—El Mariachi. This spot has become a go-to for locals craving juicy, consomé-dipped tacos loaded with slow-braised beef. Their quesa-birria (cheesy birria taco) is the stuff of Everett food dreams. Expect a little wait during peak hours, but it’s always worth it.

Must-try: Quesabirria with consomé

Hours: Tue–Sat, 11am-9pm


2. The New Mexicans

📍 1416 Hewitt Ave, Everett, WA 98201

This downtown favorite brings a blast of Southwest flavor to the PNW. Their tacos come with house-made tortillas and options like carne asada or beef brisket. You’ll also find enchiladas, tamales, and rich desserts on the menu. Bonus: visit for weekend breakfast 

Must-try: Green chile sauce

3. TACO-BOOK Taqueria

📍 1130 Broadway Ave, Everett, WA 98201

Quick, delicious, and wildly flavorful, family owned—TACO-BOOK is everything a street taco joint should be. You’ll be greeted with a smile and probably by name if you have visited more than once.  Known for no-frills delicious classics like asada, pollo, and lengua, served with spicy salsas and fresh lime. Grab a few tacos and thank us later.

Must-try: Tacos de cabeza & adobada

4. Tacos & Beer Everett

📍 1405 Hewitt Ave, Everett, WA 98201

This downtown Everett favorite combines modern Mexican street food with a fun, laid-back vibe. Their menu features everything from crispy fish tacos to flavorful carne asada—and the name doesn’t lie: the drink list is stacked with micheladas, margaritas, and a rotating beer selection. Whether you’re dining in or grabbing a quick bite, it’s the perfect stop for tacos and a good time. Don’t forget to check out their back patio – an absolutely sublime place to hang on a warm summer evening. 

Must-try: Pork belly taco or chicken con mole

5. La Sabrosa Taqueria

Family-owned and loved by locals, La Sabrosa is all about generous portions, flavorful meats, and that spicy green salsa. They’ve been a staple in the Everett food scene since 2006, and their combo plates are perfect for when you want to try a little of everything.

Must-try: Tacos al pastor
