Vegan Love: Tofu Banh Mi From Pho 36

Love alert: the tofu banh mi from Pho 36 is remarkably delicious. 

As I’ve been transitioning meat out of my diet in recent years, eating out has been one of the tougher parts for me to get used to. One thing I learned pretty quickly- not all tofu tastes the same.

This is why I was pleasantly surprised by the lunch I picked up recently. I was on my way to Silver Lake in South Everett and wanted something quick and easy that was affordable and passably healthy. I remembered from the Banh-Meetup days that Pho 36 was Tyler’s favorite. And since Pho 36 is right down the street from Silver Lake (across the street from BECU), I decided to call an order in to pick up on my way to the lake.

Now I’m far from a tofu connoisseur, but I do know there is tofu I don’t like and there is tofu I do like. Pho 36’s tofu is a definite like. It’s grilled and marinated well with a firm exterior that provides good texture. None of that squishy nonsense. 

Of course, the tofu is only one act of this three-part show. 

The veggies and bread are equally worthy. Their juicy crunchiness adds so much texture and flavor. The meld of this trifecta really hits the spot. Especially when paired with sunshine and a good view.

Pho 36’s tofu banh mi comes in a stir-fry that adds even more veggies to the mix, including grilled onions. The grilled onions were a pleasant surprise that added that much more flavor. If tofu isn’t your thing, Pho 36 can also make your banh-mi with pork, chicken, or beef.

Grab one when you’re on the run or eat it there and then pop by Tyler’s Donuts or Touba Bakery (located in the same strip mall) afterward for a post-meal treat. Either way, you can’t go wrong.
