What inspired you to start your business AND WHAT MAKES YOU UNIQUE?:

I want to create something unique and different from traditional Mexican food.
My passion for cooking and the will to represent my heritage on both the Mexican and Cuban side led me to this road i which I was able to create the first ever fusion food truck of its kind. I new that to be unique that the road to success would be three times as hard but that didn’t stop from following my dream.

What's your personal favorite item that you serve?:

Pork tostones. This dish best represents the fusion of both cultures, combining both Mexican and Cuban ingredients.

What food do you serve that your customers like the most?:

Cochinita Pibil Fluffy Tacos
This our unique take on a traditional taco. We make our tortillas fresh to order with real corn dough then deep fried to a crunchy yet chewy texture. Topped with Cochinita Pibil pork, sweet plantain, pickled red onions and cilantro.

What’s the most challenging part of running your business or an obstacle you've had to overcome?:

Creating a whole new menu to be unique was the single most challenging thing since we had teach the consumer about our product. Well worth it since now our customers know the menu by heart and their support had helped us expand rapidly.
Our business open less than a year prior to the pandemic, so time was not exactly on our side. Now the challenge became twice as big but with hard work and perseverance we managed to grow Mexicuban in the middle of the pandemic hardest times. Now we have 6 food trucks and soon to open 2 full service restaurants, Seattle and Renton.

Does your menu cater to any food allergies, vegetarian, or vegan options?:

Yes, we have vegetarian, vegan, and gluten-free options on our menu.

Asadero Prime

Favorite place in Everett to hang?:

Downtown Everett

Favorite quote and/or words to live by?:

Nothing worth fighting for comes easy.

Are you excited for the 2023 Everett Food Truck Festival? Is there anything you'd like people to know?:

Yes, we are thrilled to be back. This will be our third appearance at the festival.
We are looking forward to serving you some delicious food this August.
