Touba Bakery: New French Bakery in the South of Everett

“That’s the best thing I’ve ever tasted,” my 11-year old said. “What is?” I replied. “The thing that you smashed.” What he is referring to is the lemon meringue tart that I dropped when I was taking it out of the box, rookie food stylist that I am. It was still amazingly delicious.  

I stopped by Touba Bakery for what may be the softest of soft opens, opening at the height of the Covid-19 outbreak. But maybe it is the best time to open a business with lots of time to fine-tune. Owner Papa Seck’s alternative was to stay home, but he still had to pay rent so why not open shop.

The new bakery is located in very-south Everett, my Holly Neighborhood. It is in the strip of restaurants on 112th and west of Highway 99. Near 112th Street Diner and Razzal’s Sportsbar if that helps.  

Touba Bakery had a small but ample selection of French pastries as well as breads that weren’t available when I was there. There were ham and cheese as well as chocolate croissants. I selected a couple of plain ones since I’d just eaten lunch. I also picked a lemon meringue tart. I love lemon and I love meringue. There were raspberry lemon tarts that day too.

I raced home and tried to keep my son busy with his remote learning while I took photos. Then we dug in and tried our special treats. It turns out that even though you’ve just eaten lunch, you can still eat two croissants and a tart.  

The croissant didn’t look like the ones you see at the grocery store and I hate to bake and have no idea what makes a perfect croissant, so I Googled it. I learned that they should be puffy, have lots of butter, create lots of crumbs, have a crunchy top and lots of layers inside. Oh, and it should smell amazing too.

Our croissants were puffy, airy, springy to the touch and beautiful. The top was golden brown and glossy. It looked like it was dripping with honey. Definitely not what you find at the grocery store. There were so many delicious layers and our fingertips were proof there was lots of butter. 

There were certainly lots of crumbs. It was easy for my dog and I to find my son finishing his final bites in the living room as we followed his trail of crumbs.

The lemon meringue tart was amazing too. The lemon was just a bit tart and not too sweet. The meringue added a nice texture to each bite and reminded me of my grandma who used to make them for me. 

We plan to go back soon, but before lunch so I can try out the ham and cheese croissant. I can’t wait for the economy to get up and running and to see Touba’s cases filled with more goodies, especially macarons.  


Author’s note May 2022: Touba Bakery is up and running with full cases of goodness. I once sent my husband to pick out dessert for a family gathering and he returned with what looked like one of everything. Touba Bakery has become a favorite bakery for my family and for many in the greater Everett area.
